Located in one of the four buildings that make up the Kempinski Hotel, Salvaje enjoys an elevated view and an elegant setting, with window-side tables or tables close to the open kitchen, in a subdued, chic atmosphere. The theme is Japanese-fusion, in line with what is usually done, with an honorable technique and a broadly appealing concept. We find the basics, miso soup, edamame and shrimp tempura, then the main attraction of the menu, the sushi bar proposals, with Latin and revisited versions of the repertoire, crispy salmon, spicy tuna, shrimp rolls... Meat dishes are also on the menu, wagyu of course, with fried rice, Angus short ribs or a nine-hour lamb shoulder with teriyaki sauce. Good service.
