A standard of the Japanese fusion cuisine so widely practiced in the region, with sweet sauces and fresh produce. The place is pleasant and intimate, despite its vast proportions : a faux stone wall like a mountain, a rotunda like a sake bar, an open kitchen and well-spaced tables. The welcome and service reinforce the impression of high standing. To fit in, we choose the "Nozomi ceviche" white fish, chives oil, ginger yuzu dressing, jalapeno salsa, edible flower, crispy shallots, a fresh ensemble that lacks a little finish (fish not marinated enough, basic acidulated juice), while appreciating a certain imagination on the "Dragon unagi kabayaki eel", tamago, cucumber, avocado, ikura, unagi sauce or the "seafood takikomi-Gohan”, lobster, shrimp, sea bass, calamari, truffle butter, spring onion, fried shallots, on top of Japanese rice cooked in dashi.
