It's more than a concept, it's an idea. The idea that a single piece of meat and a single dish could represent French bistro cuisine. Various chains have sprung up, some confined to France, others spanning the globe like this "Café de Paris" version with its origins in Geneva, all boasting longevity, 50 years, 60 years, sometimes even a century. The procedure, the protocol or, if you like, the technical charter, is more or less identical for all of them : a free of charge salad as a starter, usually with walnuts, on this particular evening with just a few strips of treviso, a cut of meat of which you can pick the type (striploin, fillet, wagyu...) and cooking point (quite theoretical, as thin slicing and the use of an individual plate warmer continues to cook the meat), as many French fries as you like (matchstick format) and profiteroles or a variant (here a chocolate fondant, correct apart from the uneven temperature). In the heart of the old town, this restaurant also offers a street-side terrace, very involved and friendly service, and a classic range of drinks that could be expanded.
