While there's no shortage of transalpine-sounding restaurants in the country, there are very few that can match this Acqua e Sale, for which we fell in love. Set on the first floor of a contemporary building in a business district, this singing enclave offers a choice of two spaces : a wide veranda overlooking the city's rooftops, or a large dining room opening onto partially open kitchens. Unsurprisingly, the menu covers the entire Italian repertoire, from burrata salad to tiramisu, but the chef and his team distinguish themselves by their mastery of flavors and cooking techniques. A lovely beef carpaccio for starters, carefully presented with a sauce that's full of personality, a very fine penne all'arrabbiata, precisely cooked and perfectly spiced, and an elegant veluto russo (nicely assembled) that's both delicious and refreshing. Smiling, helpful service, reasonable bill for the service provided.
